Once it’s melted, whisk in 2 tablespoons of flour and cook it for a minute or two to get rid of the raw flour taste. Then, slowly pour in about 2 cups of milk while whisking constantly to avoid lumps. Keep stirring until it thickens up, and season with salt, pepper, and a pinch of nutmeg if you like. That’s it!
