**Roasting**: Preheat your oven to 425°F (220°C). Pat the chicken dry, season it with salt, pepper, and any herbs you like (rosemary and thyme work great). Place it breast-side up in a roasting pan. Roast for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). Let it rest for 10-15 minutes before carving. Enjoy the crispy skin!

**Grilling**: Start by spatchcocking the chicken (removing the backbone so it lays flat). Season it with your favorite marinade or rub. Preheat your grill to medium heat.
